Little Quiches

These little quiches are a favourite at any adult or children’s party.  From our experience they go so fast it’s tricky to keep the supply up with the demand!

This recipe is also great to teach kids how to cook.

  • 4 sheets filo pastry
  • Olive oil spray
  • 3 eggs
  • 3/4 cup (185ml) light thickened cream
  • 1 garlic clove, crushed
  • 100g reduced-fat feta cheese, crumbled
  • 2 beef sausages diced small
  • 8 diced vine-ripened cherry tomatoes
  • 2 spring onions, finely sliced
Step 1 Preheat oven to 180°C. Grease 8 holes of a 12-hole muffin pan.
Step 2 Place 1 sheet of filo pastry on a board and spray with a little olive oil. Place another sheet on top and repeat, spraying oil between each layer of pastry until all sheets are used.
Step 3 Cut the filo stacks into 4 widthways, then across the centre to give 8 squares. Press a filo square into each of the greased holes in the muffin pan.
Step 4 In a bowl, beat the eggs with the cream to combine.
Step 5 Add the garlic, feta, sausage, tomato and spring onions, then season to taste with salt and pepper.
Step 6 Pour the feta mixture into filo cases.
Step 7 Place in the oven for 15-20 minutes or until the filling is set and pastry is golden brown. Serve hot or cold.
