||Preheat oven to 180°C. Grease 8 holes of a 12-hole muffin pan.
||Place 1 sheet of filo pastry on a board and spray with a little olive oil. Place another sheet on top and repeat, spraying oil between each layer of pastry until all sheets are used.
||Cut the filo stacks into 4 widthways, then across the centre to give 8 squares. Press a filo square into each of the greased holes in the muffin pan.
||In a bowl, beat the eggs with the cream to combine.
||Add the garlic, feta, sausage, tomato and spring onions, then season to taste with salt and pepper.
||Pour the feta mixture into filo cases.
||Place in the oven for 15-20 minutes or until the filling is set and pastry is golden brown. Serve hot or cold.
