Cowboy Cookies - Just Fingerfoods Catering

Cowboy Cookies have an oatmeal taste, a chewy but crunchy texture as well as the added bonus of chocolate chips, this cowboy cookies recipe is sure to be a hit with the whole family!

The bigger the cowboy cookies, the more chewy it will be. So if you like chewy cookies, make them big and cook them until the edges are browned, but don’t brown the whole cookie. If you cook the cowboy cookies until it is all nicely browned all over, it will be more crisp.

  • 1/2 cup (125ml) Butter
  • 1/2 cup (125ml) White Sugar
  • 1/2 cup (125ml) Brown Sugar
  • 1 Egg
  • 1 teaspoon (5ml) Vanilla
  • 1 cup (250ml) Plain Flour
  • 1 teaspoon (5ml) Baking Powder
  • Pinch Salt
  • 1 teaspoon (5ml) Cinnamon
  • 1 cup (250ml) Rolled Oats
  • 2/3 cup (170ml) Shredded Coconut
  • 2/3 cup (170ml) Chopped Pecans
  • 1 cup (250ml) Chocolate Chips
Step 1 Preheat oven to 1750°C. Line a baking tray with baking paper.
Step 2 Cream Butter & Sugars.
Step 3 Add Egg and Vanilla. Beat until combined.
Step 4 Add Flour, Baking Powder, Salt & Cinnamon. Beat until combined.
Step 5 Stir in the remaining ingredients.
Step 6  Droop spoonfuls of the cookie mixture onto your prepared baking tray.
Step 7  Bake for 10 to 12 minutes/
